Dulce de Lechosa (Sweet of Papaya)

This delicious sweet maybe your treat at breakfast or a nice offering when friends are visiting.

Buy the least ripe papaya possible (dark green on the outside and very firm to the touch). Peel it.

Cut in half by the belly and each piece again in half longitudinally.
With a spoon take out the seeds (the best papayas to make this sweet have white seeds or seeds with a very light color which means they are far from ripe).

Cut each piece again in half longitudinally. And from these pieces cut slices transversally.

Put all the pieces on a pot.
Put sugar in the proportion of about one part of sugar for every 5 parts of papaya.

The fire should be in medium.
Move the whole pot often in circular movements (careful please) so the pieces in the bottom don’t get stuck and burn. You have to be very careful if you are going to use a wooden spoon or another tool to move the fruit because it will break very easily. You do not need to add water; the fruit already has the amount needed (but if you are worried about burning the ones on the bottom, add ¼ or a ½ cup of water).

The Fruit has to boil and it will be done when the pieces are no longer opaque in color but brilliant, like crystallized.
Let it cool and store in a glass container in the refrigerator. Serve cold, alone or with cream cheese, over crackers or directly into your mouth.
